Kitchen and Housewares Reviews of Victorinox 47547 10-1/4-Inch Wavy Bread Knife, Black Fibrox Handle

Customer Review: Wavy Edge is a Winner
Summary: 5 Stars

The best way I can describe this knife is that it's a serrated blade that cuts like a razor sharp straight blade. Unlike other serrated edges the wavy edge cuts very smoothly with no pulling or tearing. I have a bread machine and I wasn't happy with the way my expensive Chicago cutlery was mangling my bread. This bread knife slices through it like butter with very light pressure. It works great with the Norpro 370 Bread Slicer and Guide with Crumb Catcher. It also produces very few crumbs compared to other knives. As other reviewers have mentioned this knife is great for slicing just about any kind of food. I found it a bit too large to use for everything. I wanted a smaller knife with the same edge so I picked up a Victorinox Cutlery 4-1/2-Inch Wavy Edge Utility Knife, Blue Polypropylene Handle with Microban. I honestly don't believe that better knives can be found at any price.

Customer Review: Simply amazing.
Summary: 5 Stars

This is the best sub-$100 bread knife I have ever used.

I hadn't bought a knew knife in a while before this one. My taste and my budget are at opposite ends of the spectrum. I find myself lusting after $300 knives at my local kitchen store, then trudging home to use my aging low-budget knife set. After reading several great reviews of Victorinox chef knives, and finding myself lacking a usable bread knife, I took a gamble on this one. I couldn't have done better at three times the price.

One caveat: the knife is so sharp that during shipping it cut through the manufacturer's packaging! Be careful when opening.

When preparing the dough for this knife's first loaf, I accidentally scored the top too deeply; I hadn't imagined that an inexpensive knife could be so sharp, especially after its packaging mishap. The blade passes through baked bread evenly and without grabbing (even on soft, crusty breads)...it's just smooth and effortless.

I'll be replacing all of my kitchen knives with Victorinox knives.

Customer Review: This knife can really "cut" it...
Summary: 5 Stars

I have made hundreds of loaves of bread in our bread machine. Lately, I've been baking stone-ground, 100% whole wheat no knead bread. For years, we've just used electric knife to cut our bread. The electric knife blades were getting dull, and, I had my doubts that another electric knfie was the way to go.

I scouted around at a local store. Several choices, really cheap, or really expensive. Read the reviews on Amazon, and I thought I'd give this a knife a try.

I could cut that stone-ground whole wheat bread into thin slices! Even though I let the bread set for 30-45 minutes, there was steam shooting out as I sliced the bread. We had company and made some Italian Cheese bread in the bread machine. Immediately took out the loave after it was done, and within 3 minutes I was easily slicing the hot, fresh bread with my new knife.

Great buy. Great product. Buy it!

Customer Review: Cuts crusty bread great
Summary: 5 Stars

Cuts hard and crusty bread without crushing it. It is big -- if you have room for storage it is great that it is big -- one long pull and your are through the toughest crust and complete with your slice. My other knives are very expensive (Global and such). I got this because of reviews that said you can never really sharpen your serrated knives like you can other knives. I've had my $150 bread knife sharpened professionally several times. It gets sharper but not like new. My expensive old bread knife could not get sharp enough to handle super crusty bread. So, I got this Victorinox expecting to replace it in five or so years if and when it gets too dull. I had forgotten how nice a real sharp bread knife can be until I used this one last night. This should become a go-to knife whenever a serrated edge is needed.

BTW, in spite of the low price, it looks great hanging with my other knives.

Customer Review: TOO sharp?
Summary: 5 Stars

This is a great bread knife. I bought it because the bread knives that I had from block sets weren't long enough for one of the bread indexes (those things that have slots in them to cut uniform slices of bread, like the Norpro Bread Slicer with Crumb Catcher) that I use. I had switched to an index that I had gotten with an electric knife, which was narrow enough to accommodate the short knives.

When I got this knife, I continued to use the narrow index. BIG mistake! The narrow slots on this index made it easy to go a little off course and take a big chunk out of the plastic, and believe me, it went through it like you wouldn't believe.

This is typical of all the Victorinox knives that I have in my kitchen. I won't buy anything else from now on.
