I bought a couple of these to try out. They're light and flexible, and super sharp, and a couple of light strokes on my Henckels steel keeps them sharp. I use paring knives for slicing apples and other light duty chores and have owned Sabatier, Henckels and a number of knife shop brands. I think this little Victorinox is one of the sharpest and easiest to hone. At this price, I'll probably pick up a several more.Customer Review: Excellent little paring knife.

This knife is just the right size for a paring knife. It has a comfortable handle and a excellent quality blade. If your like me, then you don't actually use a paring knife that often, but when I do, I want it to do the job well. This knife does a great job. Don't fumble around with a paring knife that's blade is too small or use a knife that is too big. It's worth it to have the right tool for the right job.Customer Review: Best knves for the price

I'm a 64 yr old Grama, been cooking since I was 11. I'm a big fan of America's Test Kitchen and bought my first Victorinox knife on their recommendation. I'm buying these knives for my grown, children. These knives just keep on giving they stay sharp and are well balanced. I received my knives 3 days after ordering through Amazon. I was totally surprised when I used it the first time to cut my fruits. I didn't feel any resistance at all when cutting apple, orange,... I never felt that way with any other knives I've had. So from now, I can cut up my fruit with very little effort using this knife. Best paring knife ever at very reasonaly price. Bought this knife recently on Amazon because our local artisan bakery does not have a bread slicer, and our old bread knife would pretty much just slide across the top of the loaf. This knife starts cutting clean from the first stroke across thick crusted bread. My girl friend insists I use it only for bread, but when she's not looking, it's also great for meat or tomatoes. Buy it!
