This knife does a fantastic job for every day kitchen tasks. The first thing I did when I got it was slice a really ripe tomato. This is something that used to be so frustrating for me with my old cheap knives as they would do a decent job for the first half, but as the tomato lost structural support, it would collapse and get all mushy. And this would make me sad (it ruined my first two marriages). But this new knife is fantastic! All the way through, I was thin slicing this tomato like a pro. I had paper thin tomato slices! And that made me happy. If you want an inexpensive but super quality knife that will slice tomatoes like a sushi chef, buy this. If you want your marriage to fall apart and your career to hit a dead-end, buy a cheap knife. (I'm kidding about the marriage part, but so serious about the career thing. I got promoted to Vice President after buying this knife.)

Bought this knife after buying and using the 8 inch, top rated chefs knife. I was hoping for an equally good, useful but smaller knife -- and got it!

At first the knife seemed to be really light, and it is, much lighter than the 8 inch. But there are no compromises on strength or quality. The handle is the same material (Fibrox) as the 8 inch and really easy to hold onto if your hand gets wet or greasy.

The blade is/stays sharp like it's bigger brother. I found it easier to cut a bagel with this knife than with the bread knife I usually use. Last night I sliced up a large roast Boston Butt and the 6 incher did the job as well as the larger knife, especially with near the bone cuts, where the smaller blade was easier to use.

All in all, another great knife from Forschner!

The handle is perfectly shaped, easy to grip, and feels so good in my hand. This knife creates efficiency, swiftly gliding through squash and potatoes. It is the best knife ever.

I bought this Victorinox knife a few months ago to upgrade from a lesser quality knife, and I am so happy that I did. Yesterday, I was making soup and I reached for a knife to chop some vegetables. My new Victorinox knife was dirty (from easily slicing through cold dense fudge,) so I used my old knife, thinking that it would not be a big deal. I could not believe the difference. My old inferior knife could not even slice through celery without leaving uncut stringy bits. After five seconds of that inadequacy, I went and washed the Victorinox knife, and the rest of my slicing was quick, effortless, and flawless.

Finally decided to upgrade the kitchen knives all in one go at christmas. I purchased 6 knives altogether. 4 henckels twin pro (3", veg cleaver, santoku, 10" carver) and 2 victorinox (6" + 8"). I bought this particular knife based on the various Victorinox reviews. I use this knife everyday for everything! I have to stop myself from using it to cut thru plastic packaging etc as it never leaves my hand when i am in the kitchen. I find it is the right length for most jobs and cuts through most meat and veg like butter. The Henckels knives are also awesome too. The only thing i dont like is the fibrox handle - it does make it look cheap. But I may have to buy another for when my husband and i cook together.....

I love, love, love this knife and I didn't go broke buying it! This knife was rated by 'America's Test Kitchen' as the best chef knife under $50. It beat out Calphalon, OXO, J.A. Henkels, Chicago Cutlery, Wusthof and Farberware.

Here's their review:
"Premium-quality knife at a bargain price." Knives costing four times as much would be hard pressed to match its performance. The blade is curved and sharp; the handle comfortable. Overall, "sturdy" and "well-balanced."

So go ahead and buy it, it's worth every penny! I also bought the knife guard for storage, protects the blade and your fingers. :)

This review is for the 8" knife, not 6".
