This came in a set of knives I bought from cutleryandmore.com. I got a great deal on it, I recommend checking out Cutlery and More if you need knives or kicthen stuff.

This is a mini-chef's knife made from stamped steel. The blade is 6 inches long, but it's not shaped like a chef knife blade. It's narrower and lighter, but still thick enough to be rigid and have some weight to it. The knife is finished superbly, and came very sharp from the factory, probably one of the sharpest factory knives I've owned. I own other Victorinox (Forschner) knives, and they are all very high quality, well-made, and have lasted for years and years with no problems, something I can't say for my Cutco and Henckels knives.

It's pretty useful around the kitchen, but the size of the blade is odd. It's too long to be a utility knife or sandwhich knife, too short to be a chef's knife or slicing knife. I would have preferred a 5-inch blade over a 6-inch. I used it to julianne vegetables too big for a paring knife and it did that well. It would handle just about every cutting job you ask it to do. The fibrox handle is amazing. It fits my hand well (got big hands) enough to be comfortable and controllable. It's amazingly grippy, even when my hands were wet or slimy from handling food.

Love this little knife. Been using it since January, when I bought it here on Amazon.

In fact, I'd have to say, it's my fave kitchen knife to use daily. It feels nice in the hand, not heavy (I have a Wusthof that is beautifully feeling, but heavy, and nowhere near as sharp as this little modest baby). Easy to clean. Small enough not to be a pain in small kitchens with tiny counters (like mine).

I have three other Victorinox Fibrox knives, including the larger Chef Knife, but I keep reaching for THIS one, so I'm getting a spare and one to use a a gift. With the 4 for 3 promotion, shoot, I might be tempted to get four and save a couple for Christmas gift-giving.

I don't like to cook, but when you gotta, you gotta. And if you gotta, why not use something that's a pleasure to use and REALLY is sharp right outta the box. I couldn't wait to do the tomato test, and it passed with flying sharp colors.

Customer Review: My third Victorinox knife

I first bought an 8" Victorinox with a Fibrox handle (from Amazon), later a 10" with rosewood (?) handle (at a local store), and most recently this 6" knife with a Fibrox handle. You might say I am hooked on them. I hate using dull knives and the Victorinox knives retain sharpness very well and tune up with a "steel" in no time. Tho I like the look of the rosewood handle, if I were buying that knife again I'd go with Fibrox as I like the feel better. I never put them in the dish washer so they stay pristine and feel good in my hand with great balance and blade shape for ease of use.

If I were building a new knife set for general kitchen use I'd get this 6" and also either the 8" or 10" Chef's Knife with the Fibrox handles. I am a small person and the 10" blade is a bit large and unwieldy for me. I guess it also depends on how and how much you use them. I also suggest being careful of your cutting surface.

This is a wonderful knife. I don't think I've used a really good knife since I was growing up. My dad was a master cook and always had good knives that he kept razor sharp, but I've never owned a good set of knives. I wanted to buy some good quality kitchen knives but didn't want to spend hundreds of dollars, so I started reading reviews here and other places online. The Forschner knives had great reviews and I liked the idea of the Fibrox handle, which is slightly textured. I feel like I made a great choice. The knife is sharp, lightweight, and has good balance. The Fibrox handle is perfect for me; easy to grip and non-slip. I have arthritis and some weakness in my hands so knives with wooden or hard handles hurt my hands. This knife is a joy to use; it makes slicing and chopping for meals fun and easy and I find myself cooking more because of it. I intend to buy more of this line of knives. Highly recommended.

We have 3 other Forschner knives (8" Chef's knife & (2) 3.5" paring knives). Like the other knives, the 6" is well balanced, sharp, and holds its edge. It may take you a while to get used to using a knife this sharp. You have to use very little pressure behind the knife to slice anything. I use both our 8" & 6" regularly. The 6" is the choice for quick vegetable prep and the heavier weight of the 8" works great on meats and harder vegetables like butternut squash.

We purchased the 6" knife because the 8" Chef's knife was a bit unnerving for my wife. Being a lot sharper than any other knife we've owned (we've gotten rid of our other chef's knives after getting Forschners), she was always worried about cutting herself with the bigger knife. She has small hands and the 6" is the perfect size for her. Now that we have both, we wouldn't get rid of either. The 6" knife was a great addition to our kitchen.
