Customer Review: Unbelievable Value

Purchased based on Cook's Illustrated review of the 8" version, and I am not disappointed. If you are accustomed to a heavy knife, as I was, it will take a little bit of time to get used to the light weight of this one. But, it didn't take long for me to appreciate the lighter weight (chopping and slicing for Thanksgiving dinner). I have since ordered the 8" and the round-tip slicer, and have been happy with all of them. My next order will be for the boning knife and a 6" chef's for the smaller hands in the house. The ideal size for me would be a 9"... I find the 8" to be a little small and the 10" to be a little large, but I find myself reaching for the 10" more often than the 8". Another review complained that the knife does not hold an edge. I have not found that to be a problem in two months of relatively heavy use; I only use wood cutting boards and that may be a factor in the edge life. For a knife that costs less than $30, this is a great buy!

You will not find a better chef's knife for under $30, and you'll be hard pressed to find one this good under $50. Victorinox proves you can make a quality knife on a budget.

I've been using this knife for about a year now, and it holds an edge beautifully. I regularly hone the blade with a steel, but I have yet to actually sharpen it. Granted, I'm just a casual cook, but it still sees use nearly every day. The handle is really amazing too. The grip is good even when wet, and clean-up is a snap. If you have smaller hands or find a 10" knife unwieldy, you might want to consider the 8" version, but personally, I love the 10" for its ability to cut things like small watermelons in half in one swipe. Also, the thickness and height of the blade are good. It works well for smashing garlic cloves with the side of the blade. All in all, this is the knife to get if you don't want to spend $80 or more on a higher-end knife.

Customer Review: Inexpensive knife measures up to anything out there

I bought this following raving reviews from professional chefs. They are not wrong! Yes, it is an inexpensiely built knife, with its stamped blade and synthetic handle. It does sort of feel light and "cheap." But there the criticism stops. It was the sharpest knife out of the packaging I have ever bought(viciously sharp), as good an edge as I have ever managed to put on a blade (and I do have some expensive knives). It holds its edge well and resharpens easily. I have been using this extensively since purchase, even for jobs where the ten inches is somewhat overkill, because it is such a joy to use.

I also bought the 7 inch Santoku knife in the same series and that too is excellent. I would recommend either knife wholeheartedly and would buy others in the range without hesitation.

Had I known it was possible to fall in love with a set of knives, I would have given up my eharmony membership long ago. (Just kidding) I have a set of Calphalon Contemporary knives and thought they were great. After reading an online review at a reputable cooking site however, I bought this set for a friend. (Price to quality ratio was well-reviewed) OMG, everything you cut is like butta (except for butter itself which is like watta) Whether you buy the set or just the pieces you need, I cannot recommend these knives enough. With this chef's knife, you can do almost everything. (OK, MAYBE you want a smaller utility or paring knife as well, but still)

Oh, and though I love them to much to do so, I believe they are dishwasher safe.

I've had this knife for several years now and it's one of my 2 favorites. I,in fact, have 2 of them, one in the house and one in our RV.This knIfe has an excellent blade that sharpens well (I use an Edgepro sharpener) and maintains that edge over time. I have a set of Cutco and some Chicago Cutlery knives and none of them compare with the Forschner. I have several different Forschner knives and all of them are excellent. You'd have to spend considerably more to find a comparable knife. My other favorite, by the way, is a handmade chef's knife crafted by a fellow in Oregon from old sawmill saw blades. A wonderful, hefty knife. Try a Forschner, you won't be sorry.
