Customer Review: Sharpest Knife I've Ever Used

I've always used somewhat inferior knives that have never been sharp enough. This one came out of the box extremely, ultra-sharp. Dangerous sharp. Watch yourself with this thing. It's not to be trifled with. We'll see how long it holds its sharpness, but I think this will be my main knife in the kitchen. My knife skills are not very good, and I've sustained a fair amount of cuts on my holding hand. So I bought a pair of kevlar gloves. I feel much more safe with the glove on my holding hand. And with this piece of lethality, it really makes me feel safer. I may even buy one of the safety covers for this baby. But I love this knife -- it's the real deal for cutting onions or trimming a roast. Five stars!

I have really enjoyed using this knife, and i have used it almost everyday since i got it. The blade is quite sharp, and it makes cooking much easier and more fun (previously i had been using the Miracle pro 3 blades which were bought off of an infomercial). The handle seems very well constructed, and is easy to grip as well.

The only thing that i might have considered more would be the size of the knife. Unless you have a fairly large cutting board, this knife is a lot to handle. I have found that you should be able to place a knife on the cutting board diagonally, and if it can't touch either corner, than you are good.

A really great knife for a great price.

Cook's Magazine, which does almost ridiculously extensive testing of kitchen products and recipes, says this is the chef's knife to buy at any price. Fortunately, at about $20 on Amazon, the Forschner Victronix knife is a bargain. It's sharp, balanced well and makes food prep a breeze. I'd also read about the knife on a blog by an amateur chef in the Bay Area. Those two sources, and my frustration with every knife I'd ever bought previously, convinced me that everyone needs at least one good knife at their disposal, so I ordered this one. There may well be a $90 knife out there I would like better, but for 20 bucks, you can't go wrong with this bad boy...

This was a great purchase (per cook's illustrated/ america's test kitchen's recommendation) both in terms of price and performance. For a stamped knife it is pretty substantial- not necessarily a good or bad thing, just surprising. The edge is very sharp (on par with my pricey Wustof knifes). The handle is nonslip and comfortable but still cleans easily (not a given with nonslip handles). Food can collect where the handle and blade meet, but that's pretty minor. The heft and handle diameter of the 8" knife may not be right for someone with small hands. All said, this is a great knife. If I'm in the market for a knife, I'll look for this brand first.

Purchased this knife based on a rave review from Cook's Illustrated magazine, which I recommend for kitchen cookware reviews. We couldn't find it locally and thus purchased it off of Amazon. It has been a wonderful chef's knife, not only for its ability to hold a sharp edge for a long time, but also because of the feel of it in one's hand. I have small hands and my husband has larger hands, but both of us find the heft and weighting of this knife comfortable, as well as the handle fibrox material. Liked it so much that we bought two more as gifts for other people! It doesn't hurt that this is really not all that expensive for a quality chef's knife.
