Customer Review: Outstanding value, has become my favorite knife for all-around food prep

I bought this knife after reading many reviews in many places, including [...], [...] and, of course, amazon.com. Would I have loved a Mac or Shun? Yes, probably, maybe, but I love my wife more(!), and there's no way I could justify to her my spending well over $100 or $200 on a chef's knife at this time in our lives... That said, even after handling a number of those really expensive knives, I absolutely love the balance, weight, handle, shape, and edge of this 8" Victorinox. It just feels great in the hand, either back on the handle or choked up over the blade. The blade comes very sharp from the factory, but the edge is also very easy and not at all finicky to maintain using my standard-issue Henckels sharpener and steel. It's a fabulous value, and has become my favorite all-around knife for food preparation -- and, yes, my wife loves it too!

The Victorinox Chef's knife was featured in Cooks Magazine which my wife subscribes to. I dont often take their product reviews that seriously because cooking is my wifes's hobby. When I came upon this product, which matched a low-end choice as top-of the line, my interest got piqued. Knife envy was located in my psyche somewhere and here was my chance to get value and distinction and have it the next few days through Amazon. The sequel to the story is that Victorinox Fibrox 8-Inch Chef's Knife has become the "favorite knife for working vegetables, fruits, bread and meat". It feels good to hold and is always shinny and sharp. A friend in the kitchen. Try it you will like it, especially if you never found a sexy knife before for cheap.

I have had one of these for years. When my parents asked for "a good chef's knife" for Christmas, this is the only knife that came to mind. For under $30, you won't find a better knife. In fact, for under $100, you are not likely to find a better knife. It has a great feel and cuts beautifully.

If you're of the mindset that "more expensive means better quality", then there may be no convincing you to try this knife. But here's something to consider if you are thinking of spending $100 or more on a chef's knife: Buy this one first. If you are unhappy with it, then give it to someone as a hand-me-down (they will love it, even if you don't). Finally, go ahead and spend loads on your next knife, and then you can brag at your next dinner party about how much you spent on your latest knife.

I have ALWAYS loved forschner knives, I worked as a professional chef for better than 25 years, and I have to say I POSITIVELY HATE plastic handled knives,...I ALWAYS bought rosewood. A fellow chef suggested that I give the "black fibrox" handled knives a shot, it might change my mind on the plastic,......well, he was right,...the handle stays "grippy" even with your hands covered in oil, chicken fat, water, flour,...it didn't matter, the handle ALWAYS stayed "grippy",...amazing.

also the design of the "grip area" where the handle meets the blade was DESIGNED by someone who held a knife everyday for a long time, it takes NO pressure to grip, and the balance is perfect for fast chopping, or mincing "pepin style".

I'll be ordering more of the fibrox handles in the near future

In 20 years I have only owned two or three sets of knives these being the cheap sets that you can get for around $20. For my purposes these were OK. Recently I came across these R.H. Forschner by Victorinox on Amazon. Two things caught my eye. First the name. I've owned Victorinox pocket knives going back to when I was a young boy scout. Thus I was confident about the quality of the blades. The second thing that piqued my interest was the handle. It did not disappoint as it feels very nice in my hand. As for the blade it was sharper than any chef's knife from any of my previous sets. Slicing and dicing is very easy. I've never owned a Wüsthof or Henckels so I can't compare. However I have owned knives on the other end of the spectrum and can say that this knife is well worth difference in price.
