These are great knives out of the box but I found that, after only a month of daily use, the paring knife lost its excellent edge and had to be sharpened. I've never had good knives before, but it seems to me that the edge should last much longer than one month. It's better with the sharpening, but not as good as the original edge. I don't much use the larger slicer and chef's knives but I will probably learn how.
I'm not displeased with the set, only disappointed that the knife did not hold its edge.
Description of Victorinox 3-Piece Fibrox Chef's Knife Set
Our high carbon, stainless steel blades are hand finished in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpended over and over again. Each Victorinox knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Our patented Fibrox handles are hygienic, dishwasher safe and slip-resistant. All Victorinox cutlery products are backed by a lifetime guarantee.This set of three knives from R.H. Forschner by Victorinox makes an excellent gift for the home chef. The 4-inch paring knife adeptly manages most fruit and vegetable peeling, cutting, and garnishing; the 8-inch slicing knife carves the Thanksgiving turkey and other roasts; and the large 10-inch chef's knife tackles a multitude of kitchen chopping, mincing, and slicing tasks. The Fibrox blades are made in Germany and hand-finished in Switzerland. Providing a comfortable grip, the triple-rivet, ergonomic POM (plastic over molded) handles are curved in such a way so as to reduce wrist strain over long periods of use.
