This is a wonderful knife at a bargain price. Readers of Cooks Illustrated will recognize this knife as one of their top rated knives, and there's good reason. This knife is the perfect length for slicing roasts, hams, etc, with a single stroke. It comes with a nice edge right out of the box, and it holds its edge well.
This knife is proof that you _can_ make a great stamped-steel knife (even if most manufacturers don't).

It may seem strange to buy a fairly expensive specialty knife when we are cutting back and buying cheaper cuts of meat, but this knife has worked out perfect. I can cut paper thin, cross-grain slices like I'm slicing through butter, turning those tough but flavorful cuts into a delicious meal or to go on top of salads. Didn't pick this up until after the holidays, but thinking about cooking a large turkey breast just to test it out!Customer Review: Bigger and better than I expected

I love this knife. It's bigger than I expected. I thought the 12" measurement included the handle. The knife is easy to use. I first tried it out on a beef roast, and after a couple of slices to get the feel of things, I was slicing super thin slices with ease. The blade is sharp and the thick "spine" makes it stiff and easy to manage. The handle is comfortable and aids in control. I use this knife to slice beef brisket when I am competing in BBQ competitions. I need those slices to be absolutely perfect. No saw marks, completely equal and uniform, and no tearouts. This knife is unbelievably sharp and the length allows me to do a slice in one long pull. The hollows in the blade keep the meat from 'sticking' to the blade and messing up the cut. I love this knife and it was money very well spent.Customer Review: Oops!

We had no good slicing knife. When son-in-law carved at Thanksgiving, it was a disaster. He tried every long knife we owned. Ordered Victorinox 12' Granton Edge Slicing Knife, and told him we were ready for Christmas. "This is the best I've ever used." (He's picky.) Right down the line, balance, weight, length. edge, handle are the best. Thanks for helping us save face.
