For some time we have avoided dishes that were best if something needed to be caramelized, like creme brule, although we love them.
As it got more expensive to go out and we needed to trade off a rich desert with a very meager meal to watch the waistline, little treasures done at home got even more precious.
We approached the "torch" with caution - we drop things, spill things, and have set a few kitchens on fire. We read the instructions carefully and had firefighting apparatus handy - but, everything went fine! Get one! Fear not! Caramelized creme brule at home is good, cheap, and safe!
Description of Typhoon Professional Cook's Torch
Creamy Cr?me Brulee adds a touch of finesse to the end of every dinner party. This easy to use and verstitle cooks torch is also ideal for caramelising puddings, crisping and browning meat, skinning and roasting peppers, vegetables and much more. PerfectThe home chef can add professional touches to recipes with this catering-grade cook's torch from Typhoon. The direct, hot flame may be used to caramelize the sugar surface on cr?me br?l?e, brown roasted meat for extra color and flavor, melt cheese on soups, and blacken peppers and tomatoes for easy skinning. Features include flame adjustment, trigger-style start button, comfort-grip handle, and a safety lock that prevents the torch from igniting accidentally.
Able to stand upright on the counter when not in use, the torch measures 6-7/8 by 3-3/4 inches and comes in silver and other colors. The torch is shipped empty for safety reasons, so will require butane fuel and two AA batteries for operation. --Ann Bieri
