I'll admit that I don't have occasion to use a "boning knife" for it's eponymous purpose. I rarely remove bones from meat, although I did prepare a steak using this knife and found it to be quite satisfactory for removing the bone and fat. I've been using this as a sort of all purpose meat knife, trimming meat, filleting chicken breasts, etc. For these purposes it has been great, making easy, clean cuts without any fuss.
The balance of the knife is almost perfect, and I can hold it on a single finger easily. The rubber handle has a nice weight and grip, and I've never slipped or pulled accidentally using the knife. The tapered rise in the blade as it approaches the handle makes honing the knife before use easy, unlike some knives that have a hard edge that likes to catch during honing.
All in all, I can't be happier with this knife and it will have a place of use in my kitchen for years to come.
