Customer Review: Easy use, good construction quality, no assembly

As someone who already made homemade pasta dough at home and cut it by hand, I already had the toughest part of using a machine like this under my belt. If you know how to make homemade dough and to make it to the point that it's not sticky, you'll have a great time with this machine for the occasional rolling and cutting of pasta, noodles, etc. I've used my own recipes, not the ones that came with the machine, with no issues.

The construction feels heavy for the size of the device, and there is essentially no assembly other than attaching the handle, which is used in one side for rolling and the other side for cutting.

I had no issues with the bracket to attach it to the table, nor any issues with clearance of the handle. If you're accustomed to meat grinders, tomato juicer separators, etc. you'll have a good idea of what you need available to make this clamp to your table successfully.

It's not a huge machine. The passes of dough aren't that wide. A normal 3 egg dough will need 3 to 4 passes to get all the dough through for rolling. That being said, including clean up, this device saved me about 2/3 of the time it would normally take to make, roll and cut homemade pasta/noodles. Completely pleased for a first time use of a device like this.

I can see there is trememdous variability in the quality of this machine, as some can't use it at all due to mechanical failures, and others have no trouble at all with it. For myself, I have had no trouble using it at all. It has worked flawlessly for about 10 batches of pasta; sheets, spaghetti noodles, and flat noodles. I discovered through trial and error that one cup of flour, one egg and a couple tablespoons of milk makes enough pasta for one meal (6 servings). It also makes enough pasta to work with. More than that gets too big for one batch, I had to subdivide in order to work with it. Also, I discovered that thin sheets work great for lasagna, but if you leave it a bit thicker (3 or 4) it goes through the noodle cutters much better. The thinner sheets do not get cut very well in the noodle cutters. I can make up one batch of pasta in about 20 minutes, start to finish. Something else that is in the manual, that should be emphasized is, never wash the machine with water AT ALL. If you do, it will rust. Just brush off the extra flour and put it away.

I make Chinese noodles every week and and it has been working fine since I bought it 3 years ago. People who broke this machine don't know how to use it. I added some oil into the flour to make the work easier.

The following recipe is what I made for my mother-in-law and she loves it. It's usually very hard to make her happy.

***** Son-in-law Noodles Recipe *****
2 cups bread flour or all purpose
2/3 + 1tbsb water
1 1/4 tsb canola oil
1/2 tsb sea salt
1. run them for 10 - 20 minutes in bread maker with dough setting
2. Add some flour when make noodles in the pasta machine.
3. boil them immediately
4. cold them down in cold water and drain
5. add Chinese noodle sauce and enjoy

This machine works beyond our expectations - It is made of sold heavy stainless steel, with simple mechanism, makes crisp pasta cuts, at reasonable price (no need to pay for an Italian logo) etc. We had our first bowl of pasta in 30 minutes after we opened the box. Truly amazed by the texture of the noodle, we never had so much in one meal. We have been eating pasta for 3 decades, this machine solves all our puzzle of making good noodle. User should make sure the dough is dry and firm, before sending through the sheet press, otherwise no machine, Italian or not, will work the wonder. Dry dough is the key!

I have made ravioli's all my life and always did the pasta by hand. I have seen different types of pasta makers and thought nothing can be as good as the old muscle work. WELL I am here to tell everyone that, "that as stubborn as I am It is the best thing ever created!". It only took me a half a day to make 150 raviolli's by myself, "AMEN". I have told so many of my Italian family members about this and were they impressed. I will reccomend it to everyone else I know. So quit procrastinating and buy this wonderful machine!
