I've used this pan two times already and am very pleased with its performance. It is very sturdy and, even though it is not non-stick, it releases the cookies easily when properly greased. Cleanup is effortless - stick-on particles come off after a little soak. Just wipe, rinse, towel-dry and it's ready to go again. This pan makes 12 cookies, which is enough for up to 4 people. If you're planning to bake for a crowd or for gift-giving I'd recommend to purchase 2 pans.

It is ideal for baking the golden seashell-shaped tea cake called Madeleine.Madeleines, plain little sponge cookies immortalized by Proust in Swann's Way as the quintessential teatime comfort food, are traditionally baked in the shape of a scalloped shell. With 12 fluted cups, this classic pan makes turning out a dozen perfect 3-inch madeleines a piece of cake. The pan is made with tinned steel and features rolled edges for added durability.
