Added later: This review is of the Old Hickory seven or eight-inch butcher knife, which is what appeared here at the time I wrote the review-- NOT this boning/utility knife! They switched products on the listing. I didn't think they could do that! Anyway, here's the review of the butcher knife:

If someone shows you one of those big, shiny, clip-point, coffin-handled monsters they call Bowie knives and proposes that it is anything like the knife that Jim Bowie used to win the legendary Sandbar Fight, you show him this. Bowie's was straight-backed while this one is upswept with a trailing point, but other than that, it's far closer to the knife he carried in 1827 than any knife bearing his name today. Indeed, this knife and knives like it might have been found among the gear of any mountain man or frontiersman of the day.

It's just a common, large butcher knife (the picture here makes it look far shorter than it really is)with a plain hardwood handle held on to the full tang by two brass compression rivets. It scarcely gets any simpler than this. Comparing these dirt-cheap relics to the sexy, high-priced kitchen knives of today, it's hard not to wonder if they're really good for anything. Well, they are-- they're good for just about everything. Consider how men like Jim Bowie used them.

This one is not terribly sharp out of the package, but a few passes with a Smith's carbide "V" sharpener had it gliding through meat, vegetables and free-hanging paper.

The knife is 1095 carbon steel and will stain and rust very quickly. So after washing, rub it with a light coat of food-grade mineral oil. Looks nice on the handle, too. Never put it in the dishwasher or down in the sink.

This and other Old Hickory and Ontario work knives are astonishing bargains just about anywhere they're sold, but the price quoted here at the time of this writing is the best I've seen. They cost the same as or less than many junk knives, but they're far from junk. Instead, they're a simple idea done right with absoluely no unnecessary frills. That's why so many frontiersmen carried these knives and used them hard every day. They'll have no problem standing up to kitchen duty.
