I went all out for a birthday party for friends and ordered all of the fixins for paella, including this pan and a burner. You need to use a gas flame to make paella and I have an electric stove. The pan needs to be seasoned and the directions were very clear how to prepare the pan to use. I completed the seasoning process twice before I prepared the paella. The quality in craftsmanship of the pan is there and I am sure this pan will be around for years. If you need a gas burner, check out my review of the burner I purchased on amazon. A great combination they are... Hot [...] was a great site to order ingredients from Spain to make the paella.

I bought this paella pan for a friend who is just starting to make paella. He took his time to season the pan according to the included instructions. The first paella we made was perfect. The rice was nice and crispy on the bottom and incorporated the flavors of the fish and meats we cooked in it. It is a large pan and covers a little over one gas burner so we had to move it around a bit to make sure there were no burn spots. It is going to be perfect when we can use it on the grill this summer. Even for its price it doesn't look or feel cheap. It even looks good on the shelf.

we seasoned the pan per the instructions and have used it twice. Works as advertised. Easy to control the heat. Any larger and it would require more than one burner. We use one burner primarily, then put it over two at lower temperature until all the water is absorbed (rotating occasionally).

Authentic polished steel was easy to season and did a GREAT job with its first paellas. This is the real deal!

The pan showed up with a dent, then as you season it and start using it, the pan gets more and more warped like a U. To the point where when you put in the stock you have to be very careful or else it will spill out one side.
I guess you get what you pay for.
