Customer Review: If at first you don't succeed.....

I bought this machine after the major ice cream makers decided that downsizing the half gallon container was going to be a "great thing" for consumers. The pumped in air and ingredients of the commercial brands also helped me decide it was time to make my own ice cream. At first I thought I had made an expensive mistake. If I had to judge this unit on my first 10 batches I would have given it only one star. Through trial and error I'm now cranking out the best tasting ice cream I have ever had. My first mistake was using store bought vanilla extract, after finding a good online source my ice cream finally started to taste good. Quality ingredients are very important. My second mistake was filling the container with too much liquid, it took forever to freeze. Finally I found that freezing the ice cream for 2 hours after it comes out of the machine is a must. Bottom line, if your having problems at first, don't give up!

Buy this machine! Very compact, although bit heavy. If you're an ice cream lover and or like to tinker in the kitchen this little gem with occupy you for hours. No muss, no fuss, just load your ingredients and turn it on. I even got my elderly parents hyped about the machine.

Once you get some of the basic recipes and necesssary common ingredients down you can get creative and go wild. There is a bit of preparation for most recipes but you can also make very simple ice milks, gelatto style, and ice milks.

The included recipe book is very helpful and has everything you need to start out.

I have stayed away from using the heavy creams which are a bit less healthy and heavier in texture. Some experimentation will get you exactly what suits your taste.

A fun and creative way to avoid the junk in most commercial ice creams as well.

Imagine how popular you would be if you were able to offer your friends and family authentic homemade gelato in the time it takes to eat dinner? Job well done Lello. I usually whip up my gelato recipe in advance and leave the mixture sit in the refrigerator as I get the rest of the meal ready. As my guests arrive, I simply pop the Lello canister in the machine and hit start. By the end of the meal -- Gelato-rific! In a pinch, I make a fruit-based gelato, which doesn't require cooking. Strawberry is probably the easiest. Simply drop fresh straweberries in a blender along with heavy cream, sugar and a little lemon juice to taste. Blend for a few seconds and you're ready for the Lello. Everyone will think you've just landed on the gastronomic equivalent of the moon. BTW: I've had my machine for four or five years and it's never given me an ounce of trouble. If only I could say the same for my guests.

After using a Simac Il Gelato Magnum for seven years and making ice cream approximately 3 times weekly, I can only say that the Simac/Lello line of ice cream makers are the BEST. The new Lello 4070 is in the same class as the Magnum as far as the smoothness and creaminess of the finished product. The included recipe book is wonderful and has ingredient combinations that you just don't find in other recipe books. All you need to make perfect ice cream is this maker and the Cook's Illustrated "How to Make Ice Cream" and you are in business! I will also agree with the other reviewers in that you need to add approximately 10 minutes to the recommended times to achieve a desired finished temperature of 18 degrees.
Silkly smooth without a trace of iciness. That is what the Lello produces. What else can you say? This is truly the "Rolls Royce" of ice cream makers.

I am normally the most critical of every product that I purchase but this one is truly amazing. It's easy to clean, careful not to use too hot of water, it may warp the plastic and then parts don't fit. However, since you don't have to freeze the bucket over night you can decide to make gelato right away and it's outstanding. So far I have made 4 different gelatos, 3 different sorbets and 2 different kinds of ice cream, all of them have turned out beautifully. And if the size of the container is what you are worried about, have no fear, the 1 quart container is more than enough for at home use. DO NOT buy the bigger machine unless you plan on making ice creams and gelatos on a commercial level. Since you can make batches back to back, I was able to make 3 different sorbets for 12 people in a 6 hour period. This is the only gelato/ice cream machine that I would ever buy!!!
