To understand how this knife works, it's necessary to understand how a shrimp needs to be cleaned. There are THREE (3) areas of a shrimp that need to be cleaned after its head is removed. The first, and most obvious, is the shell. The other two items are the shrimp's digestive tract, running along the outer backside of the shrimp, usually black in color. This is NOT a "vein" but as I said, the shrimp's digestive track and is often filled with feces. This digestive tract is usually incorrectly identified as the shrimp's "vein." The shrimp's actual vein, which runs along the shrimp's underbelly, is thin and usually red, white, or purple in color. This is the part of the shrimp that many people eat even though it turns into rubber upon cooking. People who have little to no taste buds, not too picky, or who can eat anything are often ambivalent to whether or not it's removed. Personally, I've never eaten shrimp veins on purpose, and is the reason why I never eat shrimp outside except for when they've been "butterflied" which means both the front vein and back intestine are BOTH removed and completely cleaned. Now, back to the knife. This is the ONLY knife sold that has a cutting edge on both sides of the knife, the inside, concavely curved side cuts along the shrimp's back while the other convex side, simultaneously cuts through the shell. This same side, the convexly curved outer side, then can be used to cut open the underside "belly" of the shrimp to expose its actual "vein." This is how to butterfly a shrimp. Unfortunately, although this is the sharpest knife on the market, both edges can be made MUCH sharper to do the job easier. I believe they are not sold VERY sharp to reduce consumer injury as once both sides of this blade is sharpened razor-sharp, the knife does become a dangerous tool. Due to the inside (concave) curvature of the blade, it's very difficult to sharpen, but as soon as I find the correct tool to sharpen this knife, I will post an update. This knife, like all knives of this category, need sharpening to become most effective, but the tool that sharpens a concavely curved blade is essential to keeping this knife sharp and easy to use to clean shrimp. This is the best place to start since all other knives are VERY DULL compared to this one. So the bottom line is, buy this knife but know you'll have to sharpen both edges to get the full potential out of this fine kitchen tool.
