my daughter received a mandoline as a wedding gift, made of stainless steel and i have been searching for one like it these many years. i did not believe that a ceramic blade would work as well, however i was wrong. it is great !!

This item works well. You can set the slice to any of 4 thicknesses. Easy to set the thickness. The thickest slice you can make is 3mm. I think it would be more useful if you could make an ever thicker slice, say 5mm.

I love to use super thin sliced garlic in all sorts of preparations. I thin it cooks more evenly, and mellows more quickly than chopped garlic. And this mandoline, set on the .05 is my go-to gadget for that application. It produces gossamer thin slices of garlic, so I am a bit confused when others say it won't slice thin enough. Unlike my full sized mandoline, I can just grab it out of the drawer and slice. That being said, for other applications I do with the hand held mandoline, I actually prefer Oxo Good Grips Hand-Held Mandoline Slicer, which cheap, easier to adjust, and seems like a sturdier tool. It just can't slice as thin as the Kyocera. The Kyocera seems to be made of cheaper, more flimsy materials, and the little adjustment bar across the back looks like it could weaken and break over time with even moderate use. So it stays in the drawer, except when I need those gossamer slices of garlic.

The Kyocera Adjustable Mandolin slicer is not wonderful. The blade seems uneven or something. Anyway, it doesn't slice except on the thickest setting. The thingamajig that you're supposed to use to hold the vegetable that's being sliced is useless. It slips around. So you have to hold the vegetable (or whatever you're slicing) with your fingers...and risk cutting them. However, it is good for slicing zucchini because you can grasp the stem end--that is, use the stem as a holder--and not worry too much about slicing the ends of your fingers off.

I really like having this mandoline, but I wonder if another model would have been better. The blade is nice and sharp, but the guard is ineffective because it can't hold the thing (vegetable or whatever) you are cutting - it has short little prongs on it which are supposed to hold the item being cut but I find them too short to be any use. The thickness adjustment doesn't have many settings but actually they are sufficient for my purposes.
