Kitchen and Housewares Reviews of Pure Komachi by Kai 6 1/2 Inch Stainless-Steel Vegetable Santoku KnifeCustomer Review: I guess at $20 I cant be disappointed. Summary: 3 Stars
Pro's:
It's sharp, cleans up easily and looks cute.
Thin blade allows for much more precise/thin cuts than a traditional chef's knife due to its tapering. It makes easy work of thinly slicing a shallot without the blade getting in the way.
Con's:
Not as sharp as Saladin's sword as I thought it could be from the reviews.
Way too light for serious chopping, speed not really a strong suit here since you don't feel in control.
Handle feels pretty slippery with resin coating.
I think the handle is small even for my small man hands hence a feeling of insecurity. I like to choke up on the bolster on a normal knife use to get a great feeling of control.
Disclosures:
I am not a professional chef but often can cut like a machine with a good knife and a sharp blade. I often have complaints with my set of Henckles 5-star knives. But a $20 knife is not a $100 knife, and I would have to disagree with an earlier poster that it is worth the extra money if you can dominate your tool. The more expensive knives have greater weight and more precise balancing which improves performance and relieves effort.
Conclusion:
Overall this is a good knife for $20, and when I can afford a Shun santoku, I will give this to my daughter. It is a good value for those who take slicing more deliberately. It is sharp, and can get a good thin slice where you want it; however if you are deft enough with a knife to command it with speed, I would reconsider and wait for the scarole to buy a Shun or MAC.
Customer Review: decent, strange product for the money Summary: 3 Stars
There are cheap knives out there that don't perform, but this isn't one of them. When you sharpen this thing it is SHARP, I have accidental jab wounds on my fingers that will attest to this. My one major qualm is that the edge on this knife is so thin that the length of the knife sometimes will flex on a plastic cutting board when you are working too quickly and that can be a disconcerting feeling. Also keep in mind that this is a thin piece of metal wrapped in plastic and resin. The first day I had this knife, I bumped it on the counter and it spun handle-first close to the gas flame on the stove and it did start to melt. But that was my fault. Of more concern in terms of durability is the fact that the resin coating has started chipping away in maybe one or two milimeter spots on the knife's sharp edge. I was wondering how the coating would wear away as you sharpened the blade over the years; four or five months into owning the knife, here is my answer. However, I don't regret this purchase, this is a very sharp and efficient knife; if nothing else it has alerted me to the utility of the Santoku knife in general and maybe I'll now invest in a serious Santoku, one that will last 10 years or more, because I expect this knife to be toasted in a couple of years or less. It's really not bad if you consider your knives disposable or replaceable. But I have a six-inch chef's knife from Wustof and a eight-inch flexible boning knife from Henckels in the block that are laughing at this little green oddity right now, LOL.
Customer Review: Strong tastes linger on blade Summary: 3 Stars
My major complaint is that unlike a metal blade, the coating on this knife retains the smell and flavor of strong foods like onion and garlic. Several days after I used the knife to cut garlic, and washed it carefully, I could still taste the garlic on fruit that I cut with the knife. I could also smell the garlic on the blade. This quality makes the blade much less versatile and useful than a regular knife.
Customer Review: Great at first, not sure in a few months Summary: 3 Stars
Bought it on Amazon loved it, edges were sharp and smooth. Had to be careful or could lose a finger (or at least a part of it!).
Things changed within 8-10 months of use (not very heavy use, cook a couple of times a week). Has become increasingly blunt, cannot sharpen it either. This along with its matching meat knife is sitting around waiting for a replacement.
Customer Review: Lightweight Knife Summary: 3 Stars
I am a former chef and ordered the knife more out of curiosity. I think the weight of the knife is too light. My small and large chef knives cut through the same things like butter compared to this knife. Its a mediocre knife that actually takes some effort to cut through simple vegetables. I suggest you take the money and put it toward a good quality chef knife.
