I am not a kitchen gadget person, but I saw this meat tenderizer being used on two different Food Channel shows and had to have it. They explained that using the hammer-type tenderizers does not tenderize; they just smash the meat. They were right. I have used it three times so far -- on chicken breasts, on thin beef round steak to make cube steaks, and on a thicker chuck roast. This is an excellent product. Very well made, easy to use, spring action, no pounding, no smashing, easy to clean up afterwards. The tiny, sharp blades score the meat quickly and efficiently without smashing. Also great to use when you plan to marinade the meat after you have used the tenderizer. All that good marinade penetrates your chicken or beef. Have not used it on pork yet, but I will. Great way to tenderize cheaper cuts of beef. Well worth the price. It will pay for itself. I give 5-stars to this one.

Looking to save money I've tried various techniques of tenderizing cheaper meats. While it does not make a prime ribeye out of beef loin or London broil, it does do a great job of tenderizing. Because you just make the meat softer you do miss the fatty flavor of better cuts even though you may get the matching texture. Unlike marinades or chemical tenderizers I love the fact that this method doesn't change the flavor at all if you just want a nice tender steak. It is also well suited for marinated meats where the marbling (or lack thereof) does not come into play. It does require a certain amount of experience to get your desired results, but practice makes perfect. I've recommended this item to many friends and use it at least a weekly.

I advise shopping around for price but this is one kitchen gadget you must have. In today's market we all need to save a bit on the food budget and this product allows me to buy a less expensive cut of meat and actually have a better result than an expensive cut with no treatment.
The hundreds of tiny cuts achieved by using this product, break up the fibers that make the meat tough and provide openings for tenderizers and marinades to do their work.

On better cuts of meat the effects are miraculous.

Beef, Chicken and Pork all benefit from mechanical tenderizing.

This product in some form is used in many fine restaurants.

The tenderizer works as advertised. I have used it on steaks as well as chicken with excellent results. It definitely tenederizes, but also 1) speeds up cooking time, 2) allows for better marination, and 3) helps to flatten/even out the meat. Most reviewers do not mention it, but you have to use decent pressure when you push down on the tenderizer. As a result, it flattens the meat out a little. Needless to say, I wouldnt recommend it for very thin cuts of meat. Also, I have experienced better results when I flip the meat over and do both sides. I usually do two passes per side of meat with the blades oriented 90 degrees for each successive pass. This is one of those gadgets that is worth every penny.

I purchased this product from Maine Supply. Excellent seller by the way. I have used the Jaccard on chuck steak, a 5lb rump roast, pork tenderloin, round steak, boneless chicken breast, and chuck roast. The product does exactly as stated. It without a doubt tenderizes, decreases cooking time, and allows for marinades to penetrate readily. Tenderizing the rump roast on all sides gives the arm a workout but not too bad. And it is not as hard to clean up as some may lead you to believe as long as you clean right after using it and dont let the meat residuals dry on it. The benefit of the product by far out weighs any difficulty in cleaning. I cannot say enough good things about the Jaccard.
