Customer Review: Have reasonable expectations

I own a set of Henckels knives that are several years old. They are used every day and despite regular honing they were becoming dull. Keeping knives razor sharp is a skill that requires some practice and the right kind of sharpener, and so I was skeptical that one of these quick sharpeners would do a good job at sharpening them, but I decided to give it a try.

Does the sharpener make dull knives sharper? It certainly does, in just a few minutes. Does it make them sharp enough for routine use? I would say yes; I am not a professional chef, but I find that I am much happier with the performance of my knives after sharpening. Does it return them to their factory degree of razor sharpness? Unfortunatley, no. I think there is no question that my knives were sharper out of the box than I can achieve with this hand sharpener. But that does not mean that this was a bad purchase. It has restored my knives from being a bit dull to being perfectly adequate for the use they get in my kitchen.

If you want to achieve like-brand-new razor sharpness, this sharpener will not do that for you. If you want to bring your dull knives back to a degree of sharpness that will be adequate for 99% of home cooks, this would be a good item to have.

I was poised to purchase an electric knife sharpener. I'm glad I didn't. I think this knife sharpener is just fine for the everyday "Mom" kind of cook. I'm not boning chicken or chopping cups upon cups of veggies every day. I doubt this is for the very serious cook, but that type cook should probably know to hone a knife properly with a stone or a steel.

I used the 2nd slot for a newer top of the line J A Henckels chef knife, and both slots for dull Pampered Chef, Anolon and Martha Stewart knives. I did the paper test after, and all of the knives easily cut the paper at a 45 degree angle.
This sharpener looks great and doesn't take up much space on the counter if you like to hone your knives before each use. Otherwise it fits fine into my knife drawer that is 3 1/2" deep.
I have not used the knives after sharpening - I only did the paper test. I will still probably take the Henckels knife in for professional sharpening when it needs it, but I'll continue to use the 2nd slot to hone it up after every few uses.
Well worth it for $19, but I would hesitate to pay the $40 retail price.

I bought the Duo Knife Sharpener because my Wustof sharpener was wearing out. (I bought the Wustof when it was the only one in stock, and I've never been happy with it.)

When I ordered the Henckels Duo,I was ready to bring my knives in for their annual sharpening at the local kitchen supply store, so instead I tried the Duo sharpener as soon as it arrived. To my surprise, it sharpened all my knives, and I didn't have to take them anywhere. I only needed to use the coarse wheel at first, just a few pulls through, and then the fine wheel touched the knives right up. Now I touch up the blades nearly every time I use them, with the fine wheel, just to keep them "tomato" ready. They stay nice and sharp. They aren't razor sharp, but sharper than I was able to keep them before. I suppose I will need them commercially sharpened again sometime, but right now I'm happy with them the way they are.

I purchased a very nice set of knives while on business in Germany and I have been using the rod sharpener to sharpen them. It was after a few months of use that I began to feel that the knives were not holding an edge. After looking around at a number of different sharpeners I found this one from Henckels and being that they are also a very fine knife manufacture I thought I would give this product a try. I am very pleased with the performance of Henckels product and would not have any problem recommending this to a friend. One more point, the handle and base make this a very easy sharpener to use and I have found that I can get very repeatable performance. It is so easy even my wife has taken to sharpening our knives. My new knifes once again cut with very little effort and are a pleasure to use.

I have some very old Henckels knives, some of which were getting pretty dull. My husband was always trying to sharpen them with an electric sharpener, and he nearly ruined one of them that way. When I saw this manual sharpener, I thought, why not try it?

The sharpener is easy to use. You're supposed to pass the knife through the I slot about 3-5 times, then the II slot the same number of times. That's supposed to be for dull knives. Well, mine were really dull! I had to do one of them several more times than that. I was beginning to wonder, but it does work.

I sharpened the knife I use for salad and that knife is now really sharp, goes through the lettuce like butter and tomatoes are no problem.

The sharpener is reasonably priced and easy to use and store.
