If you like cooking with a cast iron skillet, this is the ideal ebelskiver pan. The cups are perfect little domes that are about the size one would expect, a little larger than some brands and a bit smaller than others. The bottom surface of the pan is cast so each cup has good contact with the heating element. A word of caution to first-time users, however; use a medium-low temperature for cooking ebelskivers in a cast iron pan, and give the pan time to heat adequately before brushing the cups with oil.
A recipe booklet is included that has quite a variety of pancake recipes: buttermilk, classic, European, cornbread, brownie, blueberry muffin, applesauce, white cake mix, omelet, crab cake, and suggestions for fillings. The pan has been treated with a non-stick finish, another reason to avoid too high a cooking temperature. I found that ebelskivers don't stick if there is a little butter or vegetable oil in the batter. I add some if the recipe doesn't include it. A rule of thumb that works for me is to add 2 tablespoons melted butter or vegetable oil (in place of an equal amount of liquid) per cup of flour in recipe. I've made traditional style, pancake mix, and cake mix ebelskivers with cooked apple slices, cooked plums, raspberry jam, chocolate chips, vanilla chips; all except the ones made with jam filling came out beautifully. (The jam melted right through to the pan--a mell of a hess.) Also, be careful to avoid contact with sides of cups when adding the filling.
The skewers they provide work great--I hold one in each hand and find that the "puffs" turn easily that way. I use a pot holder/hot pad instead of the little red mit that comes with the pan. I do like it for storing the skewers though. I put the whole bunch of them in the mit, pointed ends inside.
In addition to its superb function as a kitchen toy, it is attractive enough to display on the wall or a pot rack. I highly recommend this product.
