i have had one of these for over 40 years.so has my sister and businesd partner
all of ours were theBenriner Japanese Mandoline Slicer original wood ones....i am the only hold out who has not bought a new one.....we all have large mandolines and this is what we use.so for whatever it is worth we think they are great... i use mine almost everother day
you just have to realize that if you are down to the end of something you have to be careful or you will become part of the recipe and by the way none of us has ever had a gaurd

Ok, so I saw this cool recipe for Tangerine Dust and it called for a slicer just like this! The blogger was nice enough to put your link in her page. I ran to buy one and I am not disappointed! It really can make slices so thin you can read through them! It made the most amazing carrot chips! Yep, Carrot chips! I use it for everything from salads, tacos, desserts, main course dishes, and much more.

Oh yes, I would recommend it! Over and over again! Where has it been all my life? Now that I have this little beauty you won't find me standing in the kitchen for hours chopping up veges!

If you are a good cook this is a great tool. I've worked in many a kitchen that depend on this very slicer. It is lighter and cheaper than a french mandoline. You can simply hold it over a bowl and slice away, no setting up and easy to clean. If you are good with a knife you'll have no problem. This tool, however, is not for the clumsy or the inexperienced. The finger guard is useless so you had better know what you're doing. Tip: use to slice as much of the food item as you feel safe and finish the rest with a sharp knife.

Initially I was going to get one of those pricey slicers at Bed Bath & Beyond, but was dissuaded after reading a number of negative reviews online. I asked around and this Benriner was one of the few recommendations.
I've only used it a couple of times so far to make ratatouille (Pixar/Thomas Keller version) but it performed flawlessy. It made short work of zucchini, squash, eggplant, and getting a bunch of roma tomatoes paper thin was no problem either. Pretty happy with this purchase, and it wasn't too expensive.

We purchased this mandolin to make it easier for salad prep slicing (ie. mushrooms, cucumbers, carrots) but have found it such a breeze to use that we now prep countless dishes with the slicer. We have been using it for a few months now and the blades have stayed sharp and slice through a tomato just like the day we first tried it. We are very pleased and easily give it five stars, the guard is basically useless however, but the mandolin aspect is what I am rating and easily give it five stars.
