I bought this after researching mandolines on Amazon and other "foodie" sites and settled on the Benriner after reading reviews from people who have had theirs for 20-plus years. I also heeded the advice of those who suggested getting a glove to protect my hands. I bought this at my local Asian market for the same amount as it is on Amazon and I have been using it for about a month now. While I haven't used the different shredding blades it comes with, I have used it to make cole slaw, paper-thin slices of fennel, onions and shallots for a delicate stew I made yesterday - it works like a dream! I have never been able to make acceptable cole slaw with just my knives (and I have high-end knives). I can't wait to make sauerkraut! I rinse it in hot water and leave it to dry in the dish rack and it doesn't rust.
It is imperative (for me anyway) to buy a glove to use with this product. To those who gave it fewer stars for being dangerous, I think I would say just get a meat cutter's glove, or a fish-filleting glove, or, as I did to avoid having a uni-tasker in the kitchen, an Ove-Glove - all of these options cost about 15US to 25US each. I have been cutting myself with kitchen knives for 30 years, so I knew better than to use this slicer unprotected.

The Beriner is not the perfect mandoline but it is more useful, for more tasks than the large french mandoline I also have. It is light, easily transportable and used in more professional kitchen stations than the larger metal version.

You can throw out the finger guard the moment you get it. Like any other tool it requires care. A dish towel is a better finger guard as you get to the bitter end of a carrot or a zuchini.

The one drawback is that it does not cut thicker than about an 1/8 inch. You could not push a celery root through it or even a tough carrot the long way(you can, but it requires poise) still it is only 30 bucks and it lasts forever. Outside of dense root vegetables, it's great. One of my favortie tools, along with my vita prep, cryovac machine and immersion circulator.

This little guy works great, but unless you are absolutely positive that you will never want to cut anything larger than a medium sized mushroom, do yourself a favor and get the "Super" model. It's essentially the same thing only it's wide enough to take on whole potatoes, onions and fennel bulbs, and it has metal adjustment knobs to boot.

It's my understanding that these are high carbon steel blades, and yes, that does mean that they will rust if you put them in the dishwasher or forget to dry them thoroughly. Nothing a little Barkeeper's Friend can't fix, and a light coating of vegetable oil after washing can help keep the rust at bay if you live in a particularly humid environment.

A cut resistant glove would be a wise investment whatever model you end up with.

This is an outstanding product for the price. I am a professional cook and use it frequently. It works great, saves a ton of prep time, and is exceptionally easy to clean (about as easy as a mandoline gets which is why you will use it so often). I plastic wrap mine with the julienne blades and keep it in my work backpack. Its about as durable as a plastic framed product can be, but at $20 it very replaceable. The only problem is it is narrow (they have a wider model). It is very sharp, but easy enough to maneuver that I don't find it as dangerous as full size mandoline.

BTW - I used a kitchen towel to hold items when my fingers get close to the blades.

I have seen many television chefs use Japanese Mandolin Slicers. One day I saw a recipe I wanted to try and decided to order one. I did my research online and found the best price here.

I was surprised to receive the mandolin quickly. I went right out and purchased the ingredients for the recipe.

It was easy to use. The instructions were clear and easy to follow. It gave warnings on how a mandolin could be dangerous if used improperly. It comes with a guard for the fingers.

The recipe was delicious (it was a zucchini fritter) and I have used it for other recipes.

It is a must have tool for any kitchen.
