Part of Chefs Choice Trizor Professional Collection Stainless steel Full metal construction Comes apart for easy cleaning These ultrasharp shears are designed especially for cutting quickly and safely through poultry. Fully forged from an ultrahigh-carbon stainless metal alloy, the shears feature molded-on black molten polymer handles for a nonslip grip. Made from a unique alloy called Trizor steel, these shears have a higher carbon content than other kitchen knives and shears, giving them a higher tensile strength, which makes them stronger and more resilient. The ultrasharp blades come out of the box 2 to 3 times sharper than other scissors, and the edges last up to 10 times longer than those of other brands. Even so, the shears can be sharpened with conventional sharpeners. Molded-on handles are safe in the dishwasher, but hand washing is recommended to keep steel blades scratch free. --Doree Armstrong
