I own 4 Silpats because I bake so many cookies during the winter holidays (gifts to the library, fire station, and school). I also use them throughout the year for baking rolls, pizza, and just about anything that goes on a cookie sheet.
I cannot imagine baking without it.
Easy to use and clean.
NOTE: Don't buy look alikes. I purchased an off-brand since it cost less. I gave away the off-brand at no-cost and purchased Silpat. The cheap comes out expensive. I not only lost the cost of the off-brand, but the cookies I made were just not as easy to remove from the sheet, etc.

I love my silpat! No longer do my cookies stick to the pan. No longer do my double batches of Lace Cookies stick to the pan. No longer do I worry about my biscotti falling apart.
I am absolutely in love with my Silpat! If you bake cookies or pastry, then you should own one of these buggers!
I even retired my old Silpat to biscuit duty. Now my buttermilk biscuits slide off the Silpat. The fat content in the baking powder/buttermilk biscuits is high, so use your older Silpat for it if you can.
No more sticky Stickybuns, biscuits or cookies for me! Yay!

My wife has become a very serious baker, she has a Kitchenaid Stand Mixer and spends a lot of time making all kinds of treats. When she said she wanted Silicon Baking Mats for Christmas, I knew I needed to do some research on what was good to make sure I got her something she would be happy with.
After doing reading on all types of baking blogs, and reading reviews on Amazon's website, I decided to purchase these for her. She absolutely loves them. She did not experience any of the "smoking" or "smell" other people have reported and has made nothing but perfect cookies :).

I purchased a Silpat mat and it is a fabulous item. Cookies come off easily: no more burned bottoms or overly crispy edges. There is an image left behind on the sheet where cookies were last baked, but it doesn't affect the performance of the sheet. The sheet can produce some smoking from the oven temperature, but it wasn't a problem. I saw a similar product at my local grocery store: same size sheet but red in color (those sheets were $4.00 a piece, so it might be worth considering). I baked 4 different cookie recipes using this mat and all were the best batches I'd ever made.

For the most part, I no longer use parchment paper when baking. This has saved me money since parchment can be pricey. I have the half sheet and quarter sheet sizes.
The Silpat keeps baked goods from sticking, but it isn't just for baking. I use it when roasting veggies. I sift flour on it because it makes it eaiser for me to get the flour into my Kitchen Aid. I also shape dough on it. Pans are super easy to clean up after using a Silpat.
Just wash it in hot soapy water and it should work fine for you. Do not put it in the dishwasher or cut it.
