I have purchased several of these in the past and just recently for gifts. They are wonderful and I don't know how I ever lived without them. I truly use them for everything I cook if I think there is the least little bit of a chance something will stick. I would recommend having one for sweet foods and one for savory foods. I wouldn't want to have any kind of a cross over in taste if the silicone took on any of the flavors of the food. To tell my sweet from savory sil-pats apart, I cut a small notch in the corner of the sweet ones. This way when I grab one quickly, I know if it is for sweet or savory by looking for the notch. They last a very long time and they make clean up a breeze. You will have them for years and love them.

This is an absolute must for anyone who bakes cookies or pastry. For cookies, you put the Silpat in a cookie sheet
drop the cookie dough onto the Silpat and stick it in the oven. When the cookies are done cooking, even if you burnt them into the next dimension the cookies will not stick. The pan never has to be scrubbed again.
For making pastry you can roll the dough on the Silpat and the dough will not stick. You can flatten the dough across the Silpat and then roll the Silpat with the dough to make lekvar rolls,Stromboli, any rolling pastry with out sticking.
I'm not a professional Chef, but I'm Polish So I'm close. If you are any kind of cook buy this. Prove me wrong with this product. I dare you too.

I bought the medium jelly roll version of this for an overworked Farberware cookie sheet. The results were so good that I purchased this one for my Calphalon jelly roll- it fits perfectly. This is a fabulous kitchen addition for anyone that bakes. My cookies bake up great everytime and are easily lifted with a plastic spatula. I avoid using silicone utensils, as they don't seem to slide as well on the already silicone surface. The mat does absorb the oils from what you cook leaving it slimy, even after a soapy wash. I only use it for baking so this doesn't bother me. Beware: sharp utensils will cut through the sealant and ruin your mat. Save yourself the trouble and waste of parchment paper and get one for every pan that you own!

I bake a ton of cookies during the holidays and I love these!!! After trying it for the first time, I loved it so much, I bought another one (so I could prepare one cookie sheet while the other was in the oven). When we moved into a house with a convection oven and I learned that I could bake three sheets at once, I bought another. My sugar cookies come out of the oven absolutely perfectly done! One warning, your cookies will appear undercooked when you first take them from the oven--let them cool on the cookie sheet for a minute and then move them to a cooling rack--they'll be perfect!
They aren't at all a big deal to clean--I just leave them on the cookie sheet while I wash them. The 'floppiness' is not an issue!

My kitchen is very tiny and loaded with gadgets, utensils and cookware. Periodically, I give away what I don't use and once in awhile, I even replace something I've eliminated. I have four cookie sheets and 4 Silpats -- just enough to make double batches of cookies and keep the rotation moving. Cookies cool for a couple of minutes, then slide right off the sheets. These are ideal for fat-free cookies like the chocolate meringues I just put away, and the best for fortune cookies which require fast removal. My cookie sheets look brand new because nothing other than the Silpat ever touches them. To my sisters who were going to receive these as gifts last year, I must add my regrets because I kept this quartet for myself.
