I bought the baking stones, here from Amazon.com, You will need a pizza peel for baking on stones. You first proof your bread dough with something on the pizza peel, like cornmeal, wheat flour, white flour, or rice flour. I know from reading Healthly bread in five minutes a day, that in a pinch, one of the authors Mother's used grits!. I use proofing baskets, with liners. The baskets have different wood designs in them. When you take the bread out of the proofing basket, you have a beautiful design built right into your artian bread, the bread is then put on the lubercated pizza peel and put on the baking stones. You may have to push the bread off , if it is sticking to the peel, with a bread knife, commonly called a dough scraper. When You also take your bread off of the very hot baking stones, I also use very thick oven mits to push the hot bread back onto the peel, I learned along time ago, why keep buring my hands and arms! Now a breeze to do this without any more boo-boo's. One last thing, you do not have to use proofing baskets at all or baking stones, I just happen to like bakeing bread on stone. You can use your regular bread pans, sometimes, I use a spring form baking pan, whatever size bread I will be making. Don't so what I did last time, I forgot to grease the sides of the pan, yoe do not use the bottom, as the pizza peel will be the bottom. Let the bread bake for about 15 minutes and then remove the spring form pan. Think I have told you everything I can think of at this time. Enjoy your new pizza peel, as I have. Use it for other things also, like putting pizza into the oven, don't forget to put cornmeal on your pizza peel first, or have a fun fighting to get a mis-shaped pizza into your oven!
