Kitchen and Housewares Reviews of Concord Stainless Steel Chinese Kitchen Cleaver Chef's Knife

Customer Review: Sturdy Concord Chef's Cleaver
Summary: 5 Stars

For the low price, compared to other cleavers, this cleaver is heavy duty and does not appear to be stamped/flimsy sheet steel. Excellent heft for chopping, dicing, julienning, etc. Fast shipping.

Customer Review: concord cleaver
Summary: 5 Stars

The picture does not do justice to this product. It is well made, well balanced and very sharp. It arrived promptly, and well before visiondecor's estimated arrival date.

Customer Review: Very pretty and Pretty good
Summary: 4 Stars

First off, it really is a very pretty object, just like the other reviews have mentioned.

It's not quite what I was looking for, but I'm still happy with my purchase. Since the product refers to it as a Chinese Chef's Knife, I was hoping to be able to use it for cutting vegetables and fruits. However, weighing in at a pretty hefty 585 grams combined with a not so sharp edge, I just can't imagine wanting to cut up anything but meat with it. I don't want to say it's dull, but the edge doesn't have a very aggressive grind on it: think more along the lines of a fairly sharp hatchet as opposed to a sharp chef's knife. I can put my finger directly on the edge and apply pressure /in/ to the blade (an idiotic action that would result in blood on a sharp knife) without putting myself in any danger whatsoever.

That said, the blade is very sturdy and does a great job when you use it like a cleaver. Hacking up chunks of meat is no problem for it. Once you can start using the weight of it to your advantage, then it can really shine. While I haven't used it on any bones, I wouldn't be surprised at all if it could handle cutting through light bone. Since I'm not really interested in cutting through bone with it, I might look into taking the time to sharpen it down to a much finer edge so I can cut meat more easily with it.

To sum up: I wouldn't recommend it for cutting up produce, but if the order of the day is meat, this cleaver won't disappoint. Plus, it sure looks purty.

[Side note: I was worried about the size of the handle/possible slipperiness from another review -- don't be. I have large (although not huge) hands, and I have no problem gripping it and can only imagine it getting to be slippery enough to be dangerous if I've been rubbing my hands over fat while cooking.]

Customer Review: Awesome Cleaver - Buy this for the Home now!
Summary: 4 Stars

The pictures just don't do this cleaver justice. If you are a home chef, or somebody who needs to chop through some poultry or soup bones now and then, this is a great buy! It's made in china, but the packaging is in Japanese... so basically this is a Made in China Cleaver for the Japanese market. That's a good thing, because the japanese rarely buy/market things that are poorly made (also it probably means the original design and manufacturing was at one time done in japan). Anyways, the blade is 7" so i really can't see some of the criticism for not being able to hack apart a t-bone or quarter of frozen beef!! It's simply not an industrial-focused Cleaver, rather it's a 7", well made, beautiful looking cleaver that does it's job in the home kitchen - where it was meant to be used. If you need an industrial style cleaver I highly recommend the Cajun Cookware 4lb-er!

I just made some soup stock at home recently and used this to cut some of the marrow bones so that they fit in my 12qt Stock Pot more nicely and it worked beautifully. I agree that since the handle is polished Brass and Stainless Steel, it's a little more slippery than say a Fibrox handle from Forschner that's NSF certified for Industrial/Commercial use, but i've never had a problem with it twisting or sliding while i used it - basically i dry my hands, pick this beautiful thing up, slam it down 2 or 3 times, and i'm done with it for another week or so.

Basically, if you're sick of using your favorite Chef's Knife to hack apart poultry, or just want a Cleaver to add to your collection, you really can't go wrong with a beautiful looking, full-tang, Japan Domestic Market Cleaver for under $20!

Customer Review: Holding up well
Summary: 4 Stars

I've hacked open over a dozen young coconuts with this thing and it still seems to be going strong. It's heavy and solid.
