I have had many sets of great knives over the years but my Shun's are my all-time favorites...and this sharpener has played a part in the degree of love that I feel for my knives. This sharpener works REALLY well. I have been sharpening knives since I was a small boy. Growing up on a farm meant we used knives all the time and I was taught `a dull knife is way more dangerous than a sharp one' early on. So I would sharpen knives using grinding stones, whetstones, diamond sharpeners and a myriad of other devices. I can sharpen knives but not with the accuracy and quality that this simple device delivers.
The course side will take off some metal so I wouldn't use it every time you want a touch-up. And I still use my steel (steels don't remove metal they just point the feathered edge in the correct direction) more often than I use this sharpener. That being said I use my knifes every day and I use this sharpener about once a month.
I even use this sharpener with my pocket knives. They didn't used to have a 15 degree bevel...but they do now thanks to this amazing sharpener that just works.

Chef's Choice 463 pronto manual asian/santoku sharpener is the fastest manual sharpener on the market. The 463 includes two stages, one for sharpening and a second for honing/polishing for a razor-sharp, arch- shaped edge that is strong and durable. 100-Percent diamond abrasives are used in both stages 1 and 2, and the diamond abrasive wheels will hold its shape indefinitely, (unlike ceramic wheels which lose shape over time). The criss-cross sharpening technology creates an extremely sharp edge with lots of bite the diamond abrasive wheels sharpen simultaneously into and out-of edge for a superior burr-free edge. Micron size diamond abrasives in stage 2 leave your knife with a super sharp polished edge. The precise bevel angle control sharpens to an ultra sharp asian-style 15-degree edge.
