The thing is, I had an older model Chef's Choice that worked great but evetually wore out. My unit simply wouldn't sharpen a knife. I thought it might need to be "broken in" so kept using it on and off for a few months. No luck. I finally contacted the manufacturer and got no satisfaction. I could send it back for a $40 refurb with no guarantee that it would work any better. I use it as a paperweight.

Customer Review: HIGHLY RECOMMENDED Summary: 5 StarsIn my humble opinion there's no better tool in the kitchen than a sharp knife, and a dull knife can be dangerous. I love my Wusthof knives, but wasn't keen on the idea or the cost of sending them off for professional sharpening - and this arrangement is not exactly convenient. After reading Cook's Illustrated equipment review for the Chef's Choice Model 130 (their top-rated model they call the "Rolls-Royce of sharpeners"), and reading a great deal of feedback from folks who own and recommend the product, I purchased one for myself. I'm glad I did.
Like others have mentioned here, the instructions are goofy at best. The instructions aren't WRONG; they're just complicated and poorly written. I recommend reading through the instructions thoroughly, TWICE, before attempting to sharpen any of your knives. But don't worry about ruining your knives; the 3-stage system is practically foolproof with its spring-loaded blade guides to maintain the proper angle.
I got the hang of it after putting just one knife through all three stages, and never dreamed it could be this easy. I was able to bring every knife in my set that includes straight, serrated and santoku blades, to perfect hair-splitting sharpness in just a few minutes. MONEY WELL SPENT.

They can keep them sharpened without trying to find a professional and paying high prices to keep those serated knives sharp. I have 2 other friends that own one of these and they love them too.
Customer Review: Gets Them Sharp Summary: 5 StarsAbout 15 years ago, I purchased a Chef's Choice knife sharpener. It was good, lasted a long time, but finally wore out and had to be replaced. I looked at several sharpening methods, talked with experts, and considered my previous experience. I ruled our sharpening by hand - it looks like there is a learning curve, and good stones don't come cheap. When the new sharpener arrived, I was surprised that you only have one "grinding station" for normal knives. The second station puts on the burr you need for a good cutting knife. I was skeptical. But, when I tried it, it sharpened ALL my kitchen knives to better-than-new condition. Even the cheap ones -- Also did a great job on my old Chinese chopper! I love this sharpener, and look forward to many years of use. It seems to be built just as strong as my old sharpener - and works much better.
