I read reviews on all of Chef's Choice Food Slicers before I selected this model. I am very pleased with it. I have had other smaller slicers and did not use them very often because of difficulty in getting them as clean as I think they should be. The blade is easy to remove and it is easy to clean behind it. I keep this slicer where it is easy to get to and use it often. The slicer works as good as the reviews describe it. I works smoothly, slices very thin, easy to clean. I like the tilt feature. I enjoy using it and happy with the purchase. I own an older, cheaper slicer that could never cut Jarlsberg cheese to uniform thickness. So I feel that it's perfect.
A minor complaint after cleaning the slicer was that I had some difficulty to put back the plastic frame around the blade but once I figured it out where all the notches go, it is no problem anymore.

This is my first slicer and it was a great choice! I picked this out for myself, but my family bought this for me for Christmas. I smoked a ham, chicken, Prime Rib, pork tenderloin and sliced it all. It also sliced a brick of colby jack cheese with ease! Now I need to smoke more meats and cheese just so I can slice them. Its easy to use, easy to clean and having even slices of meats and cheese is wonderful. The performance of our food slicer is exceeding our expectations. It slices items like hard salami super thin without difficulty. It even works in making Beef Carpaccio with the standard blade. It had been on my wish list for years but I was afraid it would be a flimsy and dangerous tool, but the design of the carriage and the stability of the machine made my initial fears go away. The VariTilt is worth the extra price because the slices fall away from the blade instantly.Customer Review: This is a great slicer!

I wanted to replace my old slicer which was very difficult to clean. I checked all the reviews for the products that I found at many sites and this slicer was the one that seemed the most promising. When I received it, I checked to ensure that it would come apart, including the tray that holds the meat/cheese/veggie for slicing. This is exactly what I was looking for. I have sliced roasts, pepperoni and cheese on it so far and am delighted with the operation and the cleanup.
