Customer Review: Works about as well as one could ever hope

I thought I was quite a knife expert, having practised using a two sided stone at a cooking store where I purchased the first of my fine chefs' knives. I would use the stone every month or so and then follow with periodic fine tuning with a steel. I have been following this routine for twenty years and I thought my knives were getting the best treatment. Well, that was until I found the manual 440 two stage. I believe that only a manual can sharpen and protect a knife because overheating is known to change the temper of high carbon steel. After I got married my wife had this 440 sitting in the cabinet and I gave it a try. Not having the instructions, I used the philosophy that less is more and only pulled a few strokes through the 1 side and a few through the 2. The results were amazing! This inexpensive device preserves the hollow ground and it is almost impossible to do damage to a quality knife with this sharpener. I immediately sent one to my mother and she is getting excellent results now too. Providing that the knife is quality to start with and has not been abused by cutting on hard surfaces or clanging against metal and plates in a dishwasher, you will experience a knife that is sharper than a barber's razor. Here is a case where easy and cheap beats all other options.

I can appreciate a great knife and a microscopically perfect edge. That's nowhere close to what I end up using on a day-to-day basis. I have a few decent Henckels knives and few "value" knifes. All do a good job when they are sharp. My guess is that's the same situation where 99% of the people reading this review find themselves. When one of the knives loses their edge, I can get it back in less than a minute with this sharpener. Then the knife is good for another few weeks. Cost: A few minutes of sharpening every couple of weeks. Benefits: Very usable knives. An inexpensive and fool-proof sharpener that's sort of a Zen pleasure to use. No cords or counter clutter. I'd recommend it to most any one. If you're looking to sharpen a set of knives forged by Ninja monks and passed down through the generations, why are you reading reviews for a $20 knife sharpener? Go to a professional. Also, if many of your knives have ruined edges, it'll be too much work to get back to a decent edge with this sharpener. A pro or one of the mechanical sharpeners might be a better bet.

This is a great sharpener and does the job. There's no need to pay more. In my personal opinion, it's best use is for maintaing a sharp edge. Highly used blades, like the chef's knife and small parers simply need regular maintance. I tend to test my knives every couple of weeks. Over time, you will get a feel for when the knife is sharp or not. On the first side, a knife will feel slightly rough, then smooth out. When it feel silky, the knife is good to go to the finishing side. If your knives are quite dull, or havn't been sharpened in years, here are two recommendations: 1) have them professionally sharpened once and then use this to maintain the edge, or, 2) follow the instructions to the letter and allow the knife edge to reshape over time. Don't gring too hard. The difference between a honed edge and something less is dramatic, and over time, your will feel it. The only safe knife is a very, very sharp one.

I am not a kitchen snob. My kitchen knives are just your average block set from Wal-mart, certainly nothing fancy. In the past, I'd just replace the whole block after a couple years (I never learned how to use the sharpening rod that comes with it). My knives had gotten so dull, that recently, while trying to slice a tomato, I completely mangled it cause the knife was too dull to slice through the skin.

Well, while scoping out new knife sets, I figured I'd check out the sharpeners. I chose this one based on it's decent price, and ease of use. I absolutely love it! I sharpened all my knives, and now they'll slice through anything! I'm thrilled that I don't need to replace my knives anymore...this litte gadget was well worth the $20!

I purchased a super-duper knife set form a t.v. shopping net
work that starts with a "Q". When they arrived they were so-so
sharp. In a coulpe of weeks I was sorry I bought them. Lucky
for me I kept my old set(Chicago Cutlery). I then discovered
this sharpner and WOW. It brought my old set back to a very
sharp edge and the "super-duper set back an edge that would
cut tomatoes with out squashing them. Lesson: Don't buy knives
that have composit blades and claim to be ever-sharp. Also
don't judge a sharpner by it price. This is a good sharpener.
