Kitchen and Housewares Reviews of Chef's Choice 130 Professional Knife-Sharpening Station, PlatinumCustomer Review: Outstanding Knife Sharpener Summary: 5 Stars
I previously owned the M120 from Chef's Choice and was generally pleased with the results, but found you had to really follow the instructions and run multiple passes to achieve success. I also found the results inconsistent between knife and blade styles. Based on previous reports of this sharpener, I decided to upgrade. Bottom line: Simpler, faster, and better results. You can have hair shaving results in as little as six strokes from start to finish. Highly recommended if you are serious about sharp knives.

I got one of these as a gift, and couldn't be happier with it. I am a knife nut, and have always kept my kitchen knives very sharp. But this sharpener now has them almost razor sharp.
Be sure to read the directions completely before you use it. The stages you use, and the order you use them in will determine what kind of edge you get on your knife. And, if you use Stage 2 (steeling the edge) be sure you give the knife sufficient "pulls" across the steel to get a very, very sharp edge.
Customer Review: Great Sharpener Summary: 5 Stars
I've used it for serrated and non-serrated knives. On non-serrated knives it does an excellent job. On serrated knives it did an OK job, knives were sharper but not razor sharp like the non-serrated. In fairness maybe my old serrated knives were so far gone they needed more of a miracle than just a sharpening.
I am very satified with this sharpener (especially since I purchased a set of non-serrated knives).
The instructions are not that long and are very easy to follow.
Customer Review: Great knife sharpener Summary: 5 Stars
I've bought many knife sharpeners including an older Chef's Choice model and a manual one. I have trouble with pain in my shoulder and the other models required up to 80 passes to sharpen. This model is great! I often need only 6-10 passes to sharpen my knives. It also has a steel in the middle and I always steel a few times before cutting. My knives are much sharper and cut better and easier than they ever did. I would recommend it highly and plan on giving it as a gift in the future.
Customer Review: Chef's choice Summary: 5 Stars
I recieved my sharpening station on time as scheduled and once I found some time to set it up, I proceeded in testing. I first read through a few of the other reviews on line, then got out my Henkels knife set. At first it was a bit tricky getting the knife to obtain a burr, but once I got the technique down, it was smoothing "slicing" from there. VERY SHARP! Better edge then ever before. I'm sure it will pay for itself in no time saving on taking the knifes out to be sharpened
