I wish I had all the money back that I wasted on so-called knife sharpeners before and simply bought the ancestor of this one. Most knife sharpeners simply true or align an edge, this actually sharpens. Although the instructions are a bit complicated it is important to read them thoroughly as one does not simply take the knife through the sharpening stations numbered one through three. The resultant edges are remarkable and actually sharper than when my chef's knives were new. The sharpened knives were able to cut strips through paper and slice translucent slices of tomato. This product, though seemingly expensive, actually is a value. Highly recommended.

After years of trying out manual sharpeners of various sorts, I finally gave in and picked up this product, based on the reviews here. I am very happy with it - it's easy to use and it put a terrifically sharp edge on my battle-worn Henckel's chef knife. It sharpened both the dull and the sharp knives in my set equally well. I repeat others' recommendations when I say take the time to read the instructions - they're not long and they're straightforward - for best results.

One caveat - I own several Japanese knives, and I know the angle of this sharpener is not appropriate for them. Stick to conventional knives when using this product.

I cook all the dinners here at home, and sharp knives are an asset in the kitchen. A word of warning from the manufacturer is very true: "WARNING Knives sharpened on the Chef's Choice will be sharper than you expect. Use them with great care." I taped their warning to our knife rack as a reminder. In short, the manufacturer's instructions are very easy to follow, and the knife sharpener is very easy to use as well. It's a little pricey, but if you want really sharp knives you won't be disappointed. You can sharpen all your kitchen knives, serrated knives, and pocket knives, too. My knives are sharper than when I bought them. Good Luck!

I've been using a similar Chef's Choice sharpening system for 3 years now. I know there are people who say that you should take your knives to a professional knife sharpener to get sharpened. But I don't have the time or money to do that whenever my knives start to get dull. I can tell you that over 3 years, my knives have remained very sharp and show no signs of deteriorating. Maybe I'm blind, but I just don't see it. For sharpening knives at home, this is the way to go. I picked one of these up during Amazon's Lightning Deal for an incredible price. I'm giving it to a friend for Xmas. NOW HE WON'T KEEP CALLING ME TO BORROW MINE!!!! ;-)

Sharp knives in the kitchen are a must. With two older people sharing the kitchen, knife sharpening gets pushed aside. "I thought you were going to do it!" "No, you were supposed to." With the Chef's Choice, it's a race to see who gets to do it. The first time you use it out of the box it takes a little longer because the knives are really dull. After they're sharp, it only takes seconds to hone them into shape. I was skeptical about the claim that it sharpens serrated blades, but does do a good job on them as well. CAUTION: Read the directions and follow them! Doing it the way they say to is really important.
