Customer Review: Exceptional Sharpening

You hear a lot of comments on risking your good knives to an electric sharpener. Not willing to send mine out and without a convenient location nearby (unless I trusted some kid at the mall cutlery store), I went with one that even Cooks recommends. Sorry Alton.

My knives are all Wusthof Classics, so, a mistake here would have been costly. Even though I steel my knives all the time, three years of use had taken the edge off. I was building up calluses from cutting and using excess force, so something had to be done.

This thing worked wonders. My knives slice tomatoes again with no force. Amazing. I took this thing in to work to sharpen my co-workers blades. All of their knives of various quality (Chicago Cutlery, Henckel, farberware) all could cut soft tomatoes again.

Downsides, which really aren't...
Really cheap stamped knives are going to get eaten by any grinder.
Although you can strop serrated blades, you aren't putting a grind on them. Then again, serrated blades don't lose their edges in the crescents like your regular knives.
My wusthofs have a heel on them that can prevent the new edge from going to the end. Wusthof has a new line that doesn't have this issue. My Wusthof santoku also doesn't have this issue. This isn't the sharpeners fault.
It's big. No kidding.

Customer Review: Broght our J.A. Henkels Pro S back to Pro Sharpness

Our J.A. Henkels Pro S knives started out being very sharp. Sharp enough to cut tomatoes effortlessly. And to keep them sharp we bought the J.A. Henkels Twinsharp Knife Sharpener. But over time we have noticed the edge becoming rough and not nearly as sharp or easy to use. Not to mention the "nails on a chalkboard" feeling every time you pull a knife through the sharpener.

So I read the reviews here and decided on the Chef's Choice M130 Platinum.

We got it today, and I read the instructions, which some called not so great, and easily and effortlessly returned our J.A. Henkels Pro S to professional sharpness! They may even be better than the originally were!

I even sharpened my Gerber multi-tool knife which has a 2" blade. It is now razor sharp, better than new.

We are VERY satisfied with this sharpener and highly recommend it.

I had bought a Chef's Choice sharpener years ago, one of the models with the magnetic strips holding the blade in position and the orbital abrasive pads trying to do the sharpening. That one did not work, very crude, and ended up in a drawer after the first few tries. Furthermore, seeing what it does to the blade I was very hesitant to use it on my good knives(Henckels). After reading the reviews I decided to give another try and buy M130. This one works! Different sharpening mechanism (wheels rather than abrasive pads). Simple to use, and it does get the knives razor sharp. The key is to feel the "burr" on the blade edge (read the manual)at stage 1 before steeling or stropping. If there is no burr, you are not shaping the tip yet and it will look like it is not working.

For an electric sharpener, this one is nice. I've used it on five knives now, and all of them are sharp enough to slice a tomato without any pressure from me (just run the knife across the surface under its own weight). So I'm happy. I know that on reviews of the previous models some people complained that the sharpener didn't get their knives razor sharp. This one doesn't either. But it gets them plenty sharp enough for cooking! And much sharper than the knife vendor here in town does...

The only serious negative is that I'm not very impressed with the manual. While it does give instructions on how to sharpen your knives, I didn't think it did a good job of explaining the different types of edges this sharpener can create.

I have sharpened knives ever since I was a teenager. Now in my seventies I have learned there really is a better and easier way. The manual is well written and I would suggest that you read it first to determine the kind of sharpness you desire. I have learned that for me, I like a knife that has the micro edges that are produced by using a steel for the cutting that I do in the kitchen. This sharpener does it quickly and easily. For my hunting knife I want it to be able to shave the hair off my arm, and again it does it so easily. I am not saying that I can't produce the same degree of sharpness with my stone and steel. What I am saying is now I can do it in 5 minutes.
