I think this knife sharpener is great. I went with this model with the three-stage sharpening process to help out those knives in really rough shape. It was very easy to figure out, and while Chef's Choice recommended not using the stage three sharpener, I had to for some of my knives. I am used to taking my good Henkels over to the local butcher to have him sharpen them (for a fee of course..). He did a great job, but this gets the knives just as sharp and will pay for themselves. It even worked on my little pocket knife - it just works!

I've tried for many years, but have never been able to sharpen a knife with a stone. Decided I'd give a mechanical sharpener a shot as my kitchen and sporting knives were dull as a hammer. Ordered up the Chef's Choice 120 as I'd read some good things about it. First unit recieved had a defect, but was promptly replaced. Got the replacement and have to say I couldn't be happier. In a couple of minutes I've got a knife that will slice a tomato with only knife pressure and shave hair off my arms. READ THE INSTRUCTIONS.

I've sharpened everything. I'm not sure what one reviewer was doing wrong that they couldn't sharpen very dull knives. I took out my Grandfather's hunting knife that has been in the shed for 50 years and used as a tool for everything. It had the edge of a butter knife. It only took me a few minutes to get it sharp enough the shave with. I've had this sharpener for two years and I'm back to buy another for my mother-in-law. And I like my mother-in-law! I've sharpened many of my friends knives too. I couldn't be happier.

I've used this to sharpen a bunch of our old and new kitchen knives. These were both forged and stamped straight blades, haven't tried serrated. I can sharpen a dull knife in about 2-3 minutes. It would take me about a 1/2 hour using a manual 3-stone Smith kit I got from Walmart. The knives come out sharp enough to shave the hair on my arm, ouch. I just hope if performs as well for a long time without having to replace any of the sharpening wheels. I now look forward to sharpening knives!

We have tried a variety of knife sharpeners and they didn't work very well. Finally, I purchased this item and we have been quite pleased ever since. Friends even ask to use it. If you need sharp knives for cooking then this item is a great purchase. The cost may seem higher than most but well worth the quality and it really sharpens both serrated and straight knives. Easy to use and nice addition to a kitchen where you enjoy cooking.
