Customer Review: A little expensive, but man does it make knives sharp!

I was a little nervous about spending this much on a sharpener. Now that I have had it a few days I wish I had bought it sooner. If you understand the basics of sharpening this tool is VERY easy to use. If not, it might take a little practice to get the hang of it.
The instruction are pretty good and clear.
I have sharpened everything from good quality kitchen knives to tag sale pocket knives. When this machine is done with them you could shave with em. Amazing.
I can see one pitfall for people who don't understand sharpening (or who have weak eyesight). If you have a blade with a deeper grind angle than this machine uses you first have to re-shape the edge (on the coarse wheel). If you don't, you are simply adding a second bevel behind the old one and leaving the cutting edge alone. This may be why some people have problems. On one cheap knife I had I first had to really grind on the first stage wheel to pull an entire new bevel. Once I did it was no problem.

I purchased this sharpener because I was tired of spending $10-25 to have our knives (brutally) sharpened at the hardware store. I think they caused more damage than good. We use Wusthof knives and although there is a lifetime replacement warranty, I would prefer to not have to use this warranty. Regardless, the sharpener performed amazingly. The edges are crisp and scarily sharp. There have already been a few times when I have underestimated the sharpness and almost caused personal harm to myself, but as long as you do it right, there should be no problems.
The sharpener is extremely easy to use and took about 3 minutes to read the directions and figure out which slots to pass the blades through for the desired effect.
I would highly recommend this to anyone who wants to have a great, clean, and polished finish without investing in sharpening services ever again.

I have now used the Chef's Choice 120 Diamond hone 3 stage sharpener.
it works amazingly, my knives come out razor blade sharp every time.
i have sharpen every knive in my house, my brothers house, and even my
mother's in law house, a total of 37 knives, all razor blade sharp..
I was a skeptic initially but now i am a believer in the Chef's choice equipment.
the only flaw I have notice on the knife Sharpener is that if you apply to much pressure while sharpening your knives you will create a cut on the plastic casing of the knife Sharpener right behind the knife opening.
they should have placed a metal plate there to prevent cutting into the casing. other than that, this product delivers what it adverstises.

I ordered the Chef's Choice 120 and even before it arrived my Cook's magazine issue came and low and behold there was a rating of all the electric knife sharpeners. The magazine gave this product high praise and I back that review up with my own. I have had the sharpener for about 3 months and could not be more pleased with its ease of use and the quality of sharpness it gives to my knife blades. If you are not interested in buying a wet stone and a throp to sharpen your own knives by hand, in my opinion, this is the only other alternative. Save your pennies and buy one of your own, the only down side is that it's one of the most expensive on the market, but hey you only need one and you can pass it on to the kids!Customer Review: This is the one to buy

I purchased several models over a couple of weeks at the local stores till I finally bought this one online. This is the one to buy. The 3 sharpening wheels do a great job on even the toughest blades. I was able to change the angle on a titanium blade to the proper 20 degree cutting angle that the manufacturer choose to ignore. I really cuts welll now. Also I have been able to sharpen all of my S30v and 154cm steel tactical knives to perfect precision. Chef's Choice makes great products but the absolute best is the 120 model.
