Kitchen and Housewares Reviews of Bialetti 4-Piece Pizza Stone Set

Customer Review: works great
Summary: 4 Stars

I just used my Bialetti pizza stone for the first time yesterday. The recipe for pizza dough I have called for 475 for 12 minutes. In my oven, that was overdone. Since the recipe made enough for 3 stone sized pizzas, I got to try again. 2nd try, perfect. 460 for 9-10 minutes. For those of you curious, don't buy a cheap store brand block of mozzarella, get what looks like a ball shape and is slightly soft then grate that (or make slices from that if you prefer that method). Freshly grated cheese makes all the difference! Not only that, better quality cheese is better for you and you won't have nearly as much fats/oils separate out, if any at all. No dabbing my pepperoni pizza with a napkin here! It was just awesome. (And according to a Food Network show, dabbing that grease off at a dive joint is better for you, so keep on dabbing America!)

I read that some of you cranked your ovens to 550. I don't know if that's what the Bialetti manual says (didn't read mine) but that does seem extreme to me. For the person who grabbed the stone even with mitts on... um ya, the stone is MADE TO HOLD HEAT. You should leave the stone in the oven and use a peel or some other method of retrieving your food. I don't take my peel out until hours later when it is thoroughly cooled. Cleaning, well, ya, just use hot water. It will get spots where sauce or other ingredients got on it, but hey, deal, it will build the flavor up over time. I'm definitely going to try artisan bread on the stone.

As for the pizza peel, I went out and got one made of oak, it's not going to be breaking anytime soon! I didn't use corn meal, but regular all purpose flour on the peel, and on the bottom of the pizza dough. With a quick shake my pie was on the stone quite easily. I was a bit surprised how much flour it took to get to that point though, but it didn't really affect the flavor to much at all for me. I'm hoping over time the peel will "age" and work better with less flour.

Customer Review: The Upper Crust
Summary: 4 Stars

Was a little unsure about this item at first when reading some of the poor reviews about the stone breaking. But decided to try it. It arrived in one piece, but some of the styrofoam packing around the stone was broken when it arrived. The pizza cutter is cheap that comes with it, but I wasn't planning on using it any way. I've made 2 pizzas and 1 sourdough loaf. This stone definately improves the crust of pizzas and bread loaves. Our family is very happy with the results so far. I really bought this set because it comes with a paddle. I reduced the size of the pizza I make to 12 inches, and it still took the paddle AND a spatula to get the pizza in the oven - I was hoping for better results. The paddle had no problem taking the baked pizzas and bread OUT of the oven. I was surprised to find that the 15" stone just(and I mean just) fits in the oven. Pizza sauce did spill over and baked(burned)on to the stone. It looks ugly, but works fine. I do not put corn meal on the stone as the instructions state. It will burn. I put it under the crust, before I put the toppings on, and a little more on the paddle before scooping it up.
Still a good experience.

Customer Review: Great Product---Great Customer Service

I had an unfortunate accident when I first used the pizza stone due to lack of experience. With my first attempt at making pizza, I couldn't get the pizza off the wooden spatula so that was a disaster. I learned to use much more cornmeal and made a second attempt. The pizza appeared to be cooked. I took the stone out of the oven with my oven mitts but it was way too hot. I rushed to put it in the holder due to the heat and it broke in half. My pizza stone broke the first time I tried to use it. I was able to save the pizza. The pizza turned out to be GREAT! I called the company and the woman couldn't have been nicer. She said she would get a new stone out to me. I also asked if I could cook the pizza in the metal holder. She called the manufacturer and they said I could. If I ran into a problem with the metal holder, customer service gave me the name and number for the manufacturer and she said she would replace the metal holder if I ran into problems. Great customer service!!!! Looking forward to my new pizza stone coming.

Customer Review: Great for Bread!
Summary: 4 Stars

I have yet to use this stone for pizza, but let me tell you, it is FANTASTIC for baking artisan bread. I have baked fresh bread for my husband almost daily since receiving it, and the loaves have turned out incredible!

Maybe I will actually cook pizza on it one night, as well!

After a month of using the stone I love it. I have used it for baking bread and pizza. The peel came with a slight crack on the handle so wondering if eventually it won't break. Overall I have used it many times in the last month.
